1 cup graham cracker crumbs
1 tablespoon granulated sugar
3 tablespoons unsalted butter, melted
6 oz light cream cheese
3/4 cup Greek yogurt
2 large eggs
1 egg yolk
1/4 cup sugar
1/3 cup pineapple juice
1 tsp vanilla extract
1. Preheat oven to 300°F. Line an 8-inch square pan with parchment.
2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake for 8 minutes.
3. In a bowl, beat cream cheese until smooth. Add yogurt and blend.
4. Beat in eggs and yolk. Add sugar, pineapple juice, and vanilla. Blend until smooth.
5. Pour filling over crust. Bake for 34–36 minutes.
6. Cool for 1 hour, then chill in fridge for 3–4 hours or overnight.
7. Slice and serve with optional toppings.
Use coconut oil for a dairy-free crust.
Chill overnight for best texture.
